My sons both love peanut butter and I love chocolate, so this brownie is great for everyone's taste preferences! It comes out chewy on the outside, moist on the inside, and with a subtle peanut flavour that cuts through the sweetness of the chocolate icing.
You will need:
1/2 cup peanut butter
1/3 cup butter softened
2/3 cup white sugar
1/2 cup packed brown sugar
2 eggs
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Icing:
85g butter (3/4 stick)
1 cup icing sugar
2 tablespoons cocoa powder
1/2 teaspoon vanilla essence
Preheat oven to 350 degrees F (175 degrees C ). Grease a 9x9 inch baking pan.
In a medium bowl, cream together peanut butter and butter. Gradually blend in the brown sugar, white sugar, eggs, and vanilla; mix until fluffy. Combine flour, baking powder, and salt; stir into the peanut butter mixture until well blended.
Bake for 40-45 minutes in preheated oven, or until the top springs back when touched. Cool.
To make the icing, blend all icing ingredients together until light and creamy. Spread on top of the cool slice and cut into 16 squares.
