Food: Easter Egg Muffins.

Easter is here and with it comes the glorious smell and taste of chocolate! I am not the hugest chocolate fan but Easter always ends up being my time to indulge. Here is a simple recipe for creating some chocolate muffins with a mini Easter Egg inside, perfect for your Easter treat.


Ingredients:

1 3/4 cups plain flour
1/4 cup baking cocoa
4tsp baking powder
3/4 cup sugar
100g unsalted butter, melted
1 1/4 cups trim milk
1 egg, lightly beaten
12 pack of mini caramello eggs

Preheat the oven to 200 degrees C. Lightly grease the muffin pans.
Sift the flour, cocoa and baking powder into a large bowl.
Combine the melted butter, milk and egg in a seperate bowl then add to the dry ingredients.
Stir until the dry ingredients are just combined.
1/4 fill the muffin pans with the mixture, then place an egg in the middle of each muffin.


Place more mixture over top of the eggs.
Bake for 15 minutes or until the muffins spring back when touched in the centre.
Stand for 5 minutes, then lift out to cool.

For presentation, I sifted some icing sugar over the top of the muffins. You want to do this just before serving otherwise the icing sugar melts into the muffin.

Serve warm, and enjoy!

Craft: New Baby Card

I know a lot of my craft posts have been centered around babies recently, but there has been a bit of a baby boom in my life! This is the card I made for my nephew Liam, who arrived into the world a week ago.

I used a peice of Cloud cardstock, then trimmed the White cardstock into a piece to fit, as well as a smaller rectangle for my stamped image. I placed a peice of Honeydew paper from the Baby Boy Discover Picfolio Kit (available from Creative Memories) onto some Chocolate cardstock, and then wrapped a peice of checked blue ribbon around those two pieces and stuck it to the white cardstock, then layered them all up on the blue card. I used the Stampin' Up Baby Bundle for the pram and "Bundle of Love" quote, which I stamped using the Chocolate Chip ink. I coloured in the stamp using the Stampin' Write markers in Chocolaye Chop for the buggy, Certainly Celery for the polka dots and Pretty in Pink for the love heart. The whole card only took about ten minutes to make and I was very pleased with the end result.
