Today I am sharing with you a recipe for gluten free Rocky Road Slice- a decadent treat that will help those with food allergies or intolerance.
Rocky Road Slice (GF)
125g butter
1/2 cup sugar
3 tablespoons cocoa
1 egg
1 teaspoon vanilla essence
1 teaspoon grated orange rind
3 cups Healtheries Berry Light gluten free cereal
1/2 cup sultanas
1/2 cup marshmallows (check label, in New Zealand Pascall marshmallows are now gluten free)
Heat the butter, sugar and cocoa together in a saucepan until melted. Remove from heat and leave to cool for 5 minutes. Stir in the egg, vanilla essence and orange rind.
Fold in the cereal, sultanas and marshmallows.
Spread into a slice tin and refrigerate overnight, then cut into pieces and serve.
This will last up to a week if stored in the fridge, although it does go quite soft after a couple of days. My whole family enjoyed this slice, as well as some gluten free and non-gluten free friends. I am sure you could substitute any other berry cereal you have on hand, but I like the Healtheries one as it has a viaritey of flake shapes, sizes and textures all in the one box.
