Coconut Rough Slice



Welcome back to Chocolate Week!

I use sweetened condensed milk in a lot of things, and seem to always have some left over. This recipe is a family favourite and uses up the last bit of condensed milk from the tin. It has a rich coconut and chocolate topping, making it the perfect slice with your mid-afternoon cup of tea or coffee.

You will need:
1 1 /2 cups plain flour
3 tablespoons cocoa
2 teaspoons baking powder
3/4 cup caster sugar
1/2 cup coconut
175g butter, melted

TOPPING:
1 cup icing sugar
2 tablespoons cocoa
3 tablespoons butter, melted
1 cup coconut
4 tablespoons sweetened condensed milk
1 teaspoon vanilla essence

Preheat oven to 180C. Grease a slice tin. Sift the flour, cocoa and baking powder into a bowl and stir in the sugar and coconut. Add the butter and mix to moist crumbs. Press this crumb base mixture into the prepared tin. Bake for twenty minutes then allow to cool.

To prepare the topping, sift the icing sugar and cocoa into a bowl and stir in the melted butter, coconut, condensed milk and vanilla essence. Mix well. Spread over the base and refrigerate for two hours until firm then cut into pieces.
