What's Cooking Wednesday #9

It's that time of the week again where I try a recipe from a cookbook that has been sitting in my cupboard.


I cannot get enough of Annabel Langbein's book- I think I will end up trying 75% of the recipes in her book as they appeal to my food taste. This week, the Pineapple Upside-Down Cake called my name. The original recipe calls for one big cake, but I changed things up and made individual servings using a silicone mini cake form from Tupperware.

2 cups self-raising flour
1 teaspoon baking soda
finely grated rind of one orange
2 eggs
1 cup whole milk
1/4 cup brown sugar
1/3 cup golden syrup
1/2 cup oil

Topping:
50g butter, melted
1/2 cup brown sugar
2 tbsp golden syrup
225g can pineapple rings, drained

Preheat oven to 180 degrees C. Place all cake batter ingredients in a blender or mixer bowl and quickly process until smooth. Melt the topping butter with brown sugar and golden syrup. Pour some into the base of each individual form and then place a pineapple ring on top. Pour over the batter, tapping form on the bench to get rid of any air bubbles. Bake for 50 minutes.



These were amazing! Annabel suggests putting 1 teaspoon ground ginger in the cake batter and putting some hunks of glace ginger on top with the pineapple, which I think would be tasty but I did not do this as some family members do not like ginger. They were a perfect individual piece for a potluck dinner, with just the right amount of stickiness.

We served these beauties alongside a tub of Limon Spoonable Fudge. If you haven't tried Tub Dessert, you are missing out! They have a great range of flavours and are perfect as an accompaniment to hot or cold desserts, or even spooned straight out the tub if you just want a sweet pick me up.

This recipe would also be lovely as a full cake, and I would suggest if you make this as one big cake that you cook it for 70 minutes. A cherry in the middle would also be a great option of you don't like ginger.

Parisian Chic

This week's style challenge for the LBD 52 Ways is Parisian Chic.


 This automatically reminded me of Audrey Hepburn, so the Audrey dress was the perfect starting point. I matched this with some sunglasses and golden accessories. The love heart necklace reminded me of Paris, and so the gold accents developed from there. The look is finished off with lashing of mascara for when your sunglasses come off!

What am I actually wearing today? It is dreary and wet here in Christchurch, so I am brightening up things with a hot pink jersey and my favourite black pants, as well as some cute ballet flats. I have no idea what shoes I am going to wear with these pants over winter- I need to go boot shopping!



I am still experimenting with hot pink now that I know it is one of my colours- I got asked for ID buying wine in this ensemble so at least I can think it makes me look younger! These shoes are a new purchase but all I had to pay was shipping for these lovelies. I will be sharing a bit more about how I managed that next week.

Cowgirl Hen's Night

My sister recently got married, and I threw her a Cowgirl themed Hen's night to celebrate!

Guests were greeted at the door with a sign to set the theme for the evening:



We also had a matching banner to reiterate the theme and colour scheme.



First on the agenda was some Western cupcake decorating, provided by Taryn at Butterfingers. We made a cactus, a horse, a cowboy hat and a sheriff's badge cupcake, and so we each got to take home four cupcakes.



The food and table décor was simple since we planned to have dinner out.



A mix of sweet and savoury nibbles, and the chocolate moustaches were a hit!



Of course, we had to play games. I have linked to other sites where appropriate.

First up was Who Has The Groom. I stamped a whole lot of envelopes with this title, and then out a different famous person inside each envelope.



One envelope held the groom, and whoever had the groom got the prize.



For the next game, I cut out a whole lot of dresses and moustaches from the Crucit and attached them to Popsicle sticks.



I read out some questions I had emailed the couple, along with an answer, and the guests had to guess if it was Juliet or her fiancee who had given the answer. If they thought the answer was Juliet's, they held up the dress, and if they thought her fiancee had answered the question, they held up the moustache. If they thought that both Juliet and her fiancee had given the same answer, they held up both the dress and the moustache.



The Guess The Dress game was lent to me from my friend's sister after her Hen's night, so it was easy to set up. Each guest had to guess who belonged to the wedding dress.



We finished up with Pin the Moustache on the Cowboy.



Each winner won a "loot bag" with a Western themed notepad, a bag of Western shaped lollies, and a massage voucher.



One other fun thing we had was a photo session, where people had to get a Polaroid photo in the Cowgirl Poster.



The Polaroid was then put into a scrapbook album I had put together, and everyone wrote a message for Juliet.



Once we had finished up the games, it was time to head off on our Search For The Sheriff Scavenger Hunt! This was based around landmarks in our town with a Country and Western theme. We had some clues, and  each team had to figure out the riddles and take photos of themselves at each location before ending up at the restaurant for dinner. Here is the full set of clues if you need some inspiration.

Search for the Sheriff:
The Sherriff is hiding, he’s somewhere in town
It’s your job to read clues and hunt him down.

Christchurch has a transport station
That is near a tall object, used for hydration,
The liquid they needed for drinks or a shower
Is held up high within the concrete tower

The Sherriff is busy locking up the bad
In Addington where there’s no fun to be had.
Some Western cowboys were really quite vile
They broke the law and stayed here until their trial.

Both Sherriff and cowboys need a strong drink

Especially when you’re on a Terrace in town
And need a post by a lamp to hitch your horses down.

Cards and dice were plentiful here
You could easily make money and drink disappear
Gambling was the way to test out their luck
Some would win big, others left with a buck

When the Sheriff couldn’t find a wanted man
A reward was offered and the hunt began
A poster would show the face of a deabdbeat
There was a “…..”  on their head - now go to this street.

The Sherriff is feeling quite peckish you see,
And Mexican food is his favourite tea
He knows some brothers who like to fly
Now you must join the Sherriff , come on, don’t be shy!

Once all the teams had arrived, they found the Sheriff waiting for them.



There was also another bag to prepare everyone for the evening ahead- loaded with some bubbles, a badge, and a dare card for them to give Juliet to complete.



After dinner, it was off to have some more fun! We went to a karaoke bar and had so much fun singing, laughing and enjoying ourselves.

Overall, everyone had a great night and I was so pleased with how everything turned out.

Easter Papercraft Sampler

Time for yet another one of my Papercraft Samplers, this time with a focus on Easter.

I am always inspired by the bright colours of Easter, and I love chickens, so this was a perfect excuse to combine the two and create something bright and cheery.

Here is the finished sampler ready to hang up for my Easter decor.



I had so much fun doing these panels. This top left panel combines a coloured Easter egg, a bunny sticker, 3D tags and my Easter title. I added a little bit of embossing and the title is popped up on foam tape.



I created an Easter purse using a label punch and an oval punch, and the eggs were created from a petal punch. Some embossed scraps made a great egg, and I just love the expression on the bunny's face on the sticker panel!



Another few stickers, and then an adorable punch art bunny- I think he is my favourite square!



Lastly, some more stickers (some complete with litter) and a cute roller stamp coloured in with my markers. Some more embossing and I was done!



I definitely need to get a new 12' paper trimmer- my one is ruining the edges of my cuts and unfortunately you cannot get replacement blades or mats for it any more, so any recommendations would be wonderful.

My four year old son was so excited when he saw this completed, and I am pretty happy with it too.

Nautical LBD

Today I am taking part in the Little Black Dress challenge!


The theme for this week is- Sail Away With Me.

I found the Georgia Dress- perfect for my hourglass figure, and went on an online wishlist shopping spree.

The theme reminded me of the classic red, white and blue combo, but I wanted to stay away from stripes as I always seem to gravitate towards navy stripes and I wanted to do something a bit outside the box for me.

I love the shape and cut of this white blazer, and the anchor scarf seems like a fun addition. Red tights for autumn days, paired with some red nail polish of course! The earrings are dangly but not outrageously big for my children to pull on, and the boots are a great transitional footwear from autumn to winter.

What's Cooking Wednesday #8

This week for What's Cooking Wednesday I am featuring yet another Annabel Langbein recipe- I can't get enough of her books.

My lovely husband harvested our garden in the weekend and look at the bumper amount of carrots and beetroot we got! This wasn't even half of the carrots- most of them have ended up precooked and frozen already. We also still have an entire planter box of beetroot so feel free to send any beetroot recipes my way.



I had to put together a recipe to use these up, and Annabel's Roast Beets and Carrots seemed like a simple base. I cut all my beetroot and carrots into small batons and placed in a roasting dish with
- 1 tablespoon brown sugar
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
and roasted the vegetables at 180 degrees C for 60 minutes.



Once I had made the roasted vegetables, they were mixed together with some couscous cooked in vegetable broth with some lemon juice and lemon oil with some balsamic vinegar and raisins to make a roasted vegetable couscous salad.



Perfect with a dollop of onion relish on top!



I expected my children to be apprehensive of this dish, and sure enough my 20 month old ate all the couscous but didn't touch the beetroot. However, my four year old loved the "beetroop" and ate everything on his plate! He is always enthusiastic about eating food when he knows it has come straight from our garden, and this meal was no exception. Even my husband enjoyed it, and he made the suggestion that this would be perfect with lamb and feta mixed through it as well, or even as a side dish for a lamb main. His idea means that this salad will be featuring on my meal planner again very shortly- I have to use up these vegetables somehow!
