You probably know that we should eat fish at least once a week, but it is hard in my family finding a fish dish that everybody enjoys. However, this fish dish (adapted from Cookshelf Thai) keeps everyone happy and is a great way to eat fish.
Ingredients:
1/2 tsp sesame oil (you can substitute another cooking oil if you wish)
4 pieces of firm white fish fillet such as cod or monkfish
1/2 cup wholemeal breadcrumbs
4 tbsp sliced almonds
2 tsp Thai green curry paste
grated rind of one lemon
salt and pepper
Brush the sesame oil over the base of a ovenproof dish and layer the cod fillets in it. Brush the top of the fish with sesame oil also.
Mix together the breadcrumbs, almonds, curry paste and grated lemon rind, stirring well to blend. Season to taste with salt and pepper.
Carefully spoon the breadcrumb mixture over the fish, pressing down lightly to hold it in place.
Place the fish in a 200 degree oven and bake for 35-40 minutes until the fish is cooked through and the topping is golden brown.
I served this dish with boiled potatoes and a carrot and raisin salad (recipe to follow). I hope you enjoy it as much as we do!
